How to make fried noodles

1. Fried noodles. 250 grams of vermicelli requires about 1 kilogram of oil, and the actual consumption is about 50 grams. When the oil pan is 70% hot (just starting to smoke), put the noodles into the oil in two batches over medium heat and fry them one by one. When it turns reddish yellow, use a slotted spoon to turn it over, and then fry it until it turns reddish yellow and then remove it from the plate.

2. Prepare the ingredients. Wash and cut the leeks, and scoop the squid tentacles out of the water. Marinate the lean pork with dark soy sauce and cornstarch for 2 minutes. Slice the mushrooms.

3. Cook the noodles. Bring water to a boil in a pot, blanch the fried noodles in water, and remove from the water for later use.

4. Cook and stir-fry. Put a proper amount of oil in the pot, heat it up, add the shredded pork and squid tentacles and stir-fry slightly, add the leek segments, 1/4 tablespoon of light soy sauce and 1 teaspoon of salt, stir-fry for about two minutes, add 4 tablespoons of water, add 1 teaspoon of sugar after boiling, and put the rice noodles into the dish. Be careful to separate the noodles from other ingredients. Gently turn the dish over the noodles, cover the pot and simmer for one or two minutes. Then, hold the chopsticks in one hand and the spatula in the other, stir the noodles a few times to mix them evenly, and then serve.
