How to make ginger brown sugar pudding

1. Add ginger and brown sugar to 900 ml of boiling water and cook over high heat until the volume is two-thirds of the original volume, about 600 ml.

2. Add 100 ml of water to the water chestnut powder and stir until it is completely dissolved without any particles or lumps (if water chestnut powder is not available locally, you can purchase it online).

3. Remove the ginger pieces and turn to low heat.

4. Pour the water chestnut powder into the hot brown sugar ginger water and stir quickly until it becomes a thick paste.

5. Put it into a pudding bowl or other container mold. If you put it this way, it won’t fall out! You are not far from success.

6. Let it cool before demoulding, or put it in the refrigerator for easier demoulding. You can eat it directly without removing it from the mold, whatever you like!
