Lotus root tomato beef balls (private dish)

3. Add 5 grams of salt, 1 gram of sugar, a little pepper and an egg white to the minced beef, and stir in a clockwise direction until it is strong.

4. Add the scallion and ginger juice in five batches (only the juice, not the scallion and ginger). Stir clockwise after adding the juice each time.

5.1 Squeeze the beef balls into a pot with cold water over low heat and do not move. The beef balls will slowly float up. After the beef balls float up, continue to simmer for 10 minutes. The meatballs cooked in this way will be tender.

6.2 After the minced beef is fully stirred, add the lotus root and chopped celery, and stir in a clockwise direction until evenly stirred.

7. While the meatballs are cooking, make a cross on the top of the tomato with a knife, blanch it with boiling water, peel the tomato, and chop it into pieces.

8. Heat a wok with salad oil and fry the chopped tomatoes under low heat.

9. Stir-fry for about seven or eight minutes until the tomatoes become a sauce.

10. Add beef balls and appropriate amount of original soup, bring to a boil, and keep warm over low heat. Season with appropriate amounts of salt, sugar and pepper.

11. Slice the remaining lotus root.

12. Blanch in boiling water.

13. Cool with pure water and take out.

14. Place neatly in the middle of the soup plate.

15. Evenly place the beef balls and soup around the arranged lotus roots, garnish with a little coriander and serve.
