1. Ingredients

Main ingredients: 1 free-range chicken

Accessories: 5g fermented black beans, 5 dried chilies, 1 scallion, 2 slices of old ginger, 15ml oyster sauce, 5g white sugar, 2g salt, 5g dry starch, 10ml dark soy sauce, 15ml cooking wine, 45ml oil, 1 green pepper

2. Steps for making fried chicken

1. After preparing the ingredients, wash the chicken and cut it into small pieces. Add salt, cooking wine, dark soy sauce, green onion and ginger and marinate for 30 minutes. Pick out the green onion and ginger, add dry starch and mix well.

2. Cut the green pepper into circles and set aside.

3. Heat oil in a wok, add fermented black beans and dried chilies and stir-fry until fragrant. Add chicken pieces and stir-fry evenly. Add oyster sauce and sugar and continue to stir-fry until it changes color.

4. When the moisture of the chicken is completely dried up and fully colored, add a small bowl of hot water, just enough to cover 1/2 of the chicken. After boiling, simmer over low heat to slowly dry out the soup.

5. Finally, add the chili rings and stir-fry evenly.

Tips

1. It is best to use dry fermented black beans. If they are not available, you can use commercially available preserved fermented black beans instead, or use semi-finished sauces such as Lao Gan Ma as seasoning.

2. Many condiments in this dish contain salt, so be sure to control the amount when adding salt. Don’t put too much, otherwise it will be too salty~
