Boiled Spicy Tofu - JIARU's Recipe

1. Put the tofu you bought back in the refrigerator for an hour. If you don’t have a refrigerator, you can soak it in water for an hour. This is actually to prevent it from breaking easily when cooking. Take it out and cut it into small squares, as shown in the picture...

2. After cutting, place on a plate and set aside!

3. Wash the Chinese cabbage and enoki mushrooms, put them in a basket to drain the water and set aside!

4. Boil water in a pot, pour in the Chinese cabbage and enoki mushrooms and blanch them in the boiling water. The Chinese cabbage needs a little longer, about two minutes, while the enoki mushrooms need a quicker boil, less than a minute!

5. Take it out and put it on a large plate for later use!

6. Wash ginger, scallion, garlic, coriander, dried chili pepper, and small red pepper, cut ginger into shreds, cut scallion into chopped green onion, smash the garlic and chop it into garlic foam, cut the small red pepper and dried chili pepper into sections, and put the pickled pepper and Sichuan peppercorns in a plate for later use!

7. Take a small bowl and prepare the seasoning in advance, including one spoon each of soy sauce, oyster sauce, chili oil, Lao Gan Ma, bean paste, spicy sauce, Sichuan-style chili oil, etc., and mix well!

8. Wash the tenderloin, chop it into minced meat, add two spoons of cornstarch and one spoon of cooking wine and soy sauce to marinate. Take another small bowl, add three spoons of cornstarch, add some water and stir well for later use!

9. Heat the pan, pour in appropriate amount of cooking oil and fry the minced meat for one or two minutes!

10. Once fried, place on a plate and set aside!

11. Keep the pan hot, pour in a proper amount of cooking oil, add the adjusted seasonings and stir-fry, then pour in ginger, garlic, dried chili peppers, peppercorns, etc. and stir-fry until the oil turns red!

12. Then pour in broth or boiling water. If there is no broth, boiling water can be used instead!

13. Now pour in the tofu and cook for seven or eight minutes, then pour in the fried minced meat and cook for another two minutes, then add the adjusted cornstarch water, cook for a while, and let it absorb the flavor. Remember not to add salt because the seasoning is enough!

14. After cooking, pour it into a large plate with Chinese cabbage and enoki mushrooms, sprinkle with small red pepper and chopped green onion, put two corianders on top, and drop a few drops of peanut oil!

15. The finished product is fragrant and spicy. The delicious boiled spicy tofu is now in front of you!
