Wash the beans and cut into long sections, wash the bean sprouts, slice the pork belly, cut the ginger into shreds, and slice the green onions. 2.1 Put water in a pot and bring it to a boil. Put a cloth on the steamer (wash the cloth and wring out the water). Put in the noodles without compacting them. Make them as fluffy as possible. Cover the pot and steam them over medium heat for 15 minutes after the water boils. Open the lid of the steamed noodles, take them out, shake them with chopsticks, and let them cool. 3.2 Use the thinnest wet noodles available on the market. I personally think that only this kind of steamed noodles are the most flavorful and delicious. 4.12 Put the same amount of oil in the wok as you would for normal cooking, add the pork belly and stir-fry until the oil is almost dry and it turns golden brown, then add cooking wine and dark soy sauce, stir well, then add star anise, green onion slices and ginger shreds and stir-fry until fragrant. 5.21 Pour in the beans and bean sprouts and stir-fry evenly, then add salt, dark soy sauce and five-spice powder and stir-fry for two minutes (use a little more dark soy sauce so that the noodles can be well colored). 6. Add water until the level is almost parallel to the vegetables. 7. Bring to a boil over high heat, then switch to medium heat and stir-fry until the vegetables are cooked, with a little more than half of the water remaining. 8. Move the vegetables aside to separate them from the water. 9. Use chopsticks to shake the noodles little by little and mix them with the vegetable water. The remaining water is just enough to mix the noodles. If you have too much water left when mixing the noodles, a very crucial step is to turn on the wok fire, but on low heat! Let the fire absorb the moisture so that there will be no excess water in the pot. Make sure the noodles are not too dry and that each noodle is evenly covered with vegetable juice but not too wet. 10. Boil the water in the pot again and put a layer of vegetables in the cage covered with cage cloth. 11. Add another layer of noodles. 12. Put all the vegetables and noodles into the steamer layer by layer and cover the pot. Steam over medium heat for another 10 minutes. (The vegetables and noodles are already cooked, and steaming them again now is to make the noodles better flavored).
