How to make pork and sauerkraut dumplings

1.1 Mix the dough and set it aside to rise, while you prepare the filling.

2.2 Prepare the ingredients, chop the meat into minced meat, cut the green onion and ginger into small pieces, and chop the sauerkraut.

3.1 Add onion, ginger, salt, cooking wine, light soy sauce, chicken essence, pepper, Sichuan pepper powder and oil.

4.2 Pour 150g of water into the minced meat while stirring vigorously in one direction.

5.1 Add the sauerkraut.

6.2 Continue stirring evenly.

7.1 Take an appropriate amount of dough and knead it evenly and divide it into small portions. I only use a knife to cut it.

8.2 Stir well and the filling is ready.

9. Roll the dumpling wrappers into even thickness.

10. Start making dumplings! Hold the dumpling wrapper with one hand and add appropriate amount of stuffing.

11.Pinch the top together from the middle first.

12.Pinch both sides together, make small pleats, and wrap it up!

13. Wrap all the dumplings in this way.

14. Add water to the pot and bring it to a boil, then put the dumplings in. Add a teaspoon of salt and use chopsticks to slowly flip the dumplings upwards. Pour some water into the pot every time it boils. After about three times of pouring water, the dumplings will be cooked.

15. Add some sauce and you’re ready to eat!
