Pan-fried Norwegian salmon with orange sauce

1. Descale the salmon, clean and dry it. Cut it into evenly thick pieces for the main dish, and use the remaining scraps as side dishes. Use a small amount of salt, black pepper and cooking wine in a ratio of 1:1:1:1 and evenly spread it on the surface of the fish and marinate for fifteen minutes.

2. Take two pieces of toasted bread, remove the edges and corners, and set aside.

3. Mix the whipped cream and fresh milk, squeeze out the orange juice, lemon juice, cornstarch and water in the ratio of 1:1:1:0.5:1 respectively, and set aside.

4. The time for marinating the fish pieces can be used to make the sauce. Let’s try an orange milk sauce. Heat a pan with dry water and put the unsalted butter in the pan over low heat to melt. Pour in a little water, orange juice, lemon juice, a little salt, and stir slowly. When small bubbles just appear, turn off the heat, pour in the cornstarch that has been mixed into a paste to thicken it, then pour in the butter and fresh milk and stir quickly. Mix well and put in a bowl for later use.

5. After the butter is melted, put the bread slices in, let them absorb a lot of butter and fry on both sides until golden.

6. Melt the butter in a hot pan over low heat, place the fish fillets skin side down on the pan and fry. The marinated fish fillets will easily burn or even become mushy if fried under high heat, so keep a close eye on it.

7. Ah, it’s finally time to cook fish. I just woke up and can’t even open my eyes.

8. When the bottom of the fish pieces begins to change color and the fish skin is a little burnt, put the small fish pieces from the leftover ingredients in and fry them, because these small fish pieces are thinner and will be heated for a relatively shorter time.

9. When the fish pieces are about 30% cooked, remove from the pan and put into the oven, bake at 170 degrees for about 6 minutes (depending on the thickness). It is best when the fish meat has just changed color or is about to change color completely, so that the fish meat can lock in moisture.

10. Finally, put the dish on a plate. Heat the plate in the oven at 90 degrees for about 3 minutes. Put the fried bread on the plate, put the main fish pieces on the bread, slice the kiwi fruit and arrange them as desired, pour the orange milk sauce on the fish pieces, and it's done.
