1. Chop the green onion and shiitake mushrooms into fine pieces, and mince the meat.

2. Next, process the peppers: wash and remove the stems of the dried peppers, soak them in hot water for 10 minutes, wash and peel the ginger and garlic, break up the ginger with a knife, take the peppers out of the water, put them into a blender (keep the moisture in the peppers, don't drain them), add the ginger and garlic together, and blend the peppers until they are broken into pieces (they don't need to be too fine, the pepper skin should be the size of a fingernail)

3. Heat up a pan and pour in most of the oil. When the oil reaches 50% cooked, add the green onions and simmer over low heat until the onions are dry and yellow. Then remove from the heat and discard the onions. Add mushrooms and minced meat to the wok, then stir-fry the minced meat gently and evenly. Simmer over low heat for a while, then add the chili sauce that you just mixed, stirring while simmering. Finally, add Pixian bean paste, sugar, and salt, and simmer until the peppers are distinct and the water is dry.
