1. Pour cooking oil into the pot (a little more than usual for cooking). When the oil is hot, add the Sichuan peppercorns and stir-fry until they are spicy. Then add the dried chili peppers, ginger slices, scallions, garlic cloves, and Lao Gan Ma sauce and stir-fry until fragrant (be careful not to use too high a heat so that the Sichuan peppercorns and dried chili peppers do not get mushy). Add cooking wine, soy sauce, sugar and hot water to the pot, basically enough water to cover the fish.

2. Add the processed garoupa and cook for about 10-15 minutes. The fish is tender and does not need to be cooked for a long time. Add salt and chicken essence for seasoning.

3. After serving, garnish with a little coriander. It is recommended not to add any side dishes to the pot, so that you can enjoy the original delicious taste of the fish.

4. Cut the tofu into large pieces and slice the lotus root

5. After finishing the fish, pour the cut tofu and lotus root slices into the remaining spicy soup and boil them before continuing to eat.
