Moroccan lamb tomato stew recipe

1. Chop garlic, chop onion, dice tomato, remove seeds and set aside, dice mutton

2.1 Add the remaining olive oil to the same pot, add onions and garlic and stir-fry for 3 minutes, add cinnamon sticks, ginger powder, and black pepper and stir-fry for 1 minute, add saffron, tomato paste, pour in tomato cubes and lamb, stir well, cover the pot and simmer on low heat for 1 hour and 15 minutes

3.2 Heat a frying pan, add 1 tablespoon of olive oil, fry the lamb cubes until both sides are golden brown, remove and set aside

4. After 1 hour and 15 minutes, slightly open the lid and continue to cook on low heat for 15 minutes. Then remove the lid and cook over medium-high heat for 30 minutes until the tomato sauce becomes very thick. Add cinnamon powder and honey, season with salt and pepper, and turn off the heat.

5. Heat a small pan, put in the almonds and fry until both sides are golden brown. Just sprinkle the almonds on the lamb.
