8. Add hot water, bring to a boil over high heat then turn to low heat. After an hour, add salt and thirteen spices (add salt to taste slightly lighter because it will need to be saltier when the sauce is reduced).

9. Cook the pork trotter until it is as soft as you like, then heat up to reduce the sauce. Add some MSG to enhance the flavor before serving.
