How to cook spinach stew

1. Wash the spinach and cut into sections

2. Boil water in a pot and put the spinach in to blanch it. No need to boil again until it changes color. This step is to remove the astringency of the spinach. Take out the spinach and put it in a basin, rinse with cold water and set aside.

3. Wash the vermicelli and cook it in boiling water until there is no hard core. Remove from the water and set aside.

4. Chop the dried red pepper and green onion into sections and cut the ginger into shreds for later use.

5. Beat 2 eggs, put a small amount of oil in the pan and turn the pan a few times to allow the inner wall of the wok to stick evenly, then pour off the excess oil. Pour the egg liquid into the pan and spread it into an omelet.

6. Cut into diamond-shaped pieces and place on a plate for later use.

7. Put some oil in the pot, add a few peppercorns and the ingredients in step 4 and stir-fry until fragrant.

8. Add spinach and stir-fry evenly, then add hot water, the amount of water is up to your choice.

9. After the water boils, add salt and put the blanched vermicelli on top. Wait for a while for the flavor to absorb.

10. Add the chopped eggs and chicken essence before serving.

11. A bowl of nutritious spring noise-reducing vegetables is ready
