1. A note about the scallion oil prepared in advance. Taiwanese braised pork rice uses scallions to make scallion oil. The scallion oil residue can be mixed with rice, which is delicious! But shallots are rare here, so I made a workaround and used scallions and green onions to make scallion oil instead. The oil made from it has a light onion aroma, which is very refreshing, but also enhances the flavor! Preparation of scallion oil: Pour oil into the pot, cut the scallions into sections, add cold oil, simmer over low heat, and turn off the heat after the scallions change color. Let the oil cool down and filter it out for later use.

2.1 Simmer on low heat for one hour. Add a little salt to season when the sauce is collected, but light soy sauce and fermented bean curd themselves contain salt, so the final amount of salt depends on your taste.

3.2 Blanch the whole piece of pork belly in water, wash off the foam, blood and other dirt, and cut into small pieces with a length of 1 cm for later use. Boil the eggs, peel them, cut them a few times with a knife and set aside. Pour some oil (prepared scallion oil) into the pot, stir-fry the meat after it is 80% hot, add two spoons of cooking wine, half a spoon of fish sauce, 4 spoons of light soy sauce, half a spoon of dark soy sauce, and two spoons of sugar, stir-fry evenly, then pour in boiling water and put in the eggs. The amount of boiling water should cover all the ingredients. Add star anise, cinnamon, bay leaves, and fermented bean curd. Turn to low heat and simmer after turning to high heat.

4. The length of time it takes to collect the juice determines the final product. One kind has a lot of juice, the color of the meat is not bright, but it is very delicious with rice. The other type has less juice, with the sauce wrapped around the meat, which is delicious. According to feedback from the public, they want more juice so that it is easier to mix with rice, so turn on high heat for 10 minutes until the juice is slightly reduced.
