Pour some oil (prepared scallion oil) into the pot, stir-fry the meat after it is 80% hot, add two spoons of cooking wine, half a spoon of fish sauce, 4 spoons of light soy sauce, half a spoon of dark soy sauce, and two spoons of sugar, stir-fry evenly, then pour in boiling water and put in the eggs. The amount of boiling water should cover all the ingredients. Add star anise, cinnamon, bay leaves, and fermented bean curd. Turn to low heat and simmer after turning to high heat. 4. The length of time it takes to collect the juice determines the final product. One kind has a lot of juice, the color of the meat is not bright, but it is very delicious with rice. The other type has less juice, with the sauce wrapped around the meat, which is delicious.
