How to make Shaanxi gluten cold noodles

Now that people’s lives are better, they have become more careful about what they eat. In the past, people ate to fill their stomachs. Nowadays, people eat for health, so here I would like to introduce to you a healthy and delicious Shaanxi gluten cold skin.

1. Prepare 200 grams of ordinary flour.

2.1 Knead the dough into a dough of moderate hardness and softness. If it is too soft or too hard, it will be inconvenient for subsequent operations. Let it rest for 20 minutes.

3.2 Add appropriate amount of clean water to the flour and mix it into cotton wool pile.

4.1 Wash repeatedly until the water turns white.

5.2 Add water to the rested dough and start washing (kneading the dough).

6.1 The purpose of washing the dough is to fully wash out the starch, leaving only gluten.

7.2 Pour the washed flour water into another basin and continue adding water to wash the dough.

8.12 Prepare the side dishes: cucumber, carrot, chives, garlic

9.21 Chop shallots and garlic into fine pieces, and cut carrots and cucumbers into thin strips for later use.

10. The washed flour water needs a long time to settle. After one hour, pour out the top layer of clear water, and the rest is the starch water for making cold skin.

11. Boil water in a pot. The pot should be big enough to hold the plate.

12.1 Brush the disc evenly with oil. (I use an 8-inch pizza plate for making cold noodles. If you don’t have one, you can use other stainless steel plates.)

13.2 Steam the washed gluten for 10 minutes and turn off the heat when it is cooked.

14. Stir the starch paste evenly, scoop out an appropriate amount and pour it into the oiled round plate. Put the round plate into a large pot of boiling water, cover the pot and steam for about 1-2 minutes, until you see large bubbles on the dough (prepare another basin with cold water)

15. Peel off the steamed dough along the edge of the round plate and put it in a basin of cold water to cool down (the cold water in the basin should be changed frequently)

16. If you are going to eat it right away, you don’t need to apply oil. Apply oil on the plate. If you are going to put it in the refrigerator, apply appropriate amount of oil on the dough.

17. Prepare all the starch water in turn, stack the dough together, cut into your favorite shapes, and cut the gluten into small pieces.

18. Prepare garlic water (chop the garlic, pour in cold boiled water, and then add a little salt, so you don’t need to add salt when eating cold noodles) and scoop a large spoonful of sesame paste and mix well.

19. Add soy sauce, vinegar, pepper oil, chili oil, and sesame oil, pour over the cold noodles, sprinkle with chili oil, sesame seeds and chopped green onions, mix well and you can enjoy.
