Use a spoon to wipe the small pieces of flour to the edge of the bowl to ensure that there are no dry powder pieces in the soup, otherwise the taste will not be very good. I used cake flour, which doesn't clump easily and is easy to mix and sprinkle. Wash and chop the green onions or leeks and put them into a small bowl and mix them together. I made this for two people, which makes about 12 pancakes

2. Cut the cucumber into shreds and set aside (or replace it with shredded potatoes or carrots according to your preference)

3. Add a little oil to the hot pan. Too much oil will cause the egg liquid to clump easily! After the oil is slightly hot, turn the heat to the lowest setting, add two spoons of the beaten batter, rotate the pan to allow the batter to flow into a pancake shape. (If you are making it for the first time, you can put a small spoonful to test the consistency of the batter. If it does not flow when it rotates in the pot, you need to add some water).

4. When the pancake is solidified and small bubbles appear on the bottom of the pan, you can flip the pan over!

5. Fry both sides until slightly yellow and then you can serve! If the first one is successful and does not stick to the pan, you can continue to make it without adding oil. After making about three, add a little more oil. Pancakes that are too greasy are not tasty, of course this is also a matter of personal preference!
