Tenderloin meat is the most tender

Salt water method: Use high-concentration salt water to thaw the frozen meat, so that the meat will be tender and fresh after the dish is cooked.

Mustard method: When cooking meat, you can evenly apply mustard on the meat the night before, and wash it with clean water before cooking. This way the beef will be easier to cook and the meat will be tender.

Soda method: Soak the cut meat slices in a baking soda solution and then fry them to make the meat soft.

Sweet and Sour Pork Tenderloin

1. Tighten the tenderloin, cut into small pieces, add salt, cooking wine, soy sauce and starch and mix well.

2. Wash and slice the three side dishes. You can fry them in oil first; cut the onion into small pieces, slice the ginger and garlic and set aside.

3. Mix the egg white, starch and flour evenly, and add appropriate amount of water according to the specific situation. Then add the meat and mix well.

4. Take a small bowl, add sugar, salt, cooking wine, soy sauce, vinegar, and starch to make a sauce. You can also add a little tomato sauce.

5. Pour oil into a wok and heat it to 50% hot, then put in the meat and fry until it turns light yellow, then remove from the oil and drain. Heat the oil to 70% hot, then put in the tenderloin and fry again until golden brown, then remove from the oil and drain.

6. Leave some oil in the pot, heat it up, sauté the scallions, ginger and garlic, then pour in the prepared sauce.

7. When the sauce becomes thick, pour in the fried side dishes and meat, stir-fry until the vegetables and meat are evenly coated with the sauce and serve.

Deep-fried pork tenderloin with salt and pepper

Material

Main ingredients: one pound of tenderloin, two tablespoons of starch, one egg white, one tablespoon of cooking wine, one tablespoon of flour, and one teaspoon of salt.
