Seasoning: 25 grams of sesame seeds, 2 grams of cumin, 25 grams of chili (red, pointed, dry), 4 grams of salt, 3 grams of pepper, 5 grams of white sugar, 10 grams of soy sauce, 3 grams of chicken essence, 16 grams of shacha sauce, 20 grams of green onion, 80 grams of vegetable oil, and 15 grams of red glutinous rice.

1. Remove the clam meat, clean it and put it on a plate; cut the dried chili into sections; cut the scallion into small pieces;

2. Put the pot on the fire, add a little vegetable oil, add the dried chili segments and fry until fragrant, then remove from the heat and chop into fine pieces with a knife and put into a bowl for later use;

3. Add vegetable oil to the pot and heat it to 60% hot, add chopped green onion, shacha sauce, clam meat, and salt and stir-fry for a few times, add special fresh soy sauce, sugar, red yeast rice juice, chicken essence, and dried chili powder and stir-fry until cooked, add cumin powder, pepper oil, and cooked sesame seeds, stir well, remove from the pan, and serve.

2. Clam meat tofu

1. Main ingredients: clams

2. Accessories: soybeans, radishes, eggs, shallots, onion and ginger slices, chili oil

3. Production method:

(1) Add the soaked soybeans to mineral water and use a juicer to make soybean juice and soybean dregs;

(2) Steam the squeezed soybean juice and residue together for 15 minutes and set aside;

(3) Boil the clams that have spit out the sand in water and take out the clam meat and clam soup for later use;

(4) Peel the green radish, cut it into short strips, blanch it in hot water and set aside;

(5) Heat peanut oil in a pan, add the steamed soybean juice, slag, and eggs, and fry them briefly. Then add clam meat, shredded radish, clam soup, salt, and MSG. Simmer for 10 minutes until the shredded radish is soft and ready to serve.

(7) It is best to serve with a small dish of chili oil.

3. Dried clam meat with celery

Main ingredients: 400 grams of clams, 100 grams of celery.

Accessories: chili (red, pointed), 30 grams.

Seasoning: 10 grams of cooking wine, 2 grams of pepper, 15 grams of shrimp oil, 3 grams of salt, 1 gram of MSG, and 1 gram of Sichuan pepper.

1. Peel the celery, remove the tendons, wash and cut into diamond-shaped dices;

2. Remove the seeds and dice the red pepper;

3. Take the clam meat, dry it and soak it until soft;

4. Put the diced celery into the pot and blanch it with boiling water, then cool it down with cold water;

5. Add diced celery, clam meat, diced chili pepper and seasoning, mix well and serve.
