How to make European bread

1. 300g high flour, 220g water, 1g yeast, 6g salt, mix and shape the dough

2.1 Take it out the next day and warm it up at room temperature for 1 hour. Pour the dough onto the chopping board and fold the four corners towards the center.

3.2 Cover with plastic wrap and place in a warm place to ferment. Take it out and fold it up and down and left and right every half an hour (like folding a quilt). After folding it 6 times, the dough will basically be firm and will not stick to your hands. At the same time, a lot of air will enter the dough. Place it in a warm place and wait for the volume to ferment to 2~2.5, then put it in the refrigerator for 12 hours

4.1 Tighten the dough, put it into the fermentation basket, and ferment it again for 40-50 minutes

5.2 Repeat the same action again, be gentle and don't destroy the bubbles

After 6.7 minutes of fermentation, turn it upside down and cut it diagonally twice

7. Preheat the oven to 250 degrees, place the dough on the stone plate on the bottom layer, add 2 cups of boiling water to the baking tray on the top layer, let the oven be filled with steam and bake for 20 minutes

8. Remove the upper baking tray and continue baking for about 20 minutes to allow the dough to be fully colored.
