How to fry golden needles

There are many ways to cook enoki mushrooms. They can be cooked in hot pot, stir-fried, and stir-fried with many vegetables, such as leeks, eggs, etc. The nutritional value of enoki mushrooms is also very good. 1. Golden needle eggs

Material

Some dried day lily

A pack of fresh enoki mushrooms

2 duck eggs

Fish sauce

A little sugar

A little chicken stock

Peanut oil

1. Soak the golden needles in water in advance for about 2 hours.

2. Remove the heads of the enoki mushrooms, wash them with clean water, blanch them in boiling water, and filter out the water.

3. Beat the eggs and add fish sauce. You can add more fish sauce so that it will no longer be salty after a while.

4. Heat a pan with a proper amount of oil, stir-fry the lily bulbs, then add the enoki mushrooms and stir-fry together.

5. Pour the egg liquid on the two golden needles, wait until the bottom is formed, and start stir-frying.

6. Pour the egg in later, so that the egg and the two golden needles can blend together better and become indistinguishable from each other.

7. Sprinkle a little sugar and chicken essence and remove from heat.

2. Leek and Enoki Mushroom

Material

300 grams of leeks, 50 grams of enoki mushrooms, and appropriate amounts of oil, salt and chicken essence.

1. Wash and cut the leeks into sections and blanch the enoki mushrooms.

2. Heat oil in a pan and stir-fry leeks and enoki mushrooms.

3. When the leeks become soft and change color, add salt and chicken essence to season.

4. Add 1 tablespoon of water when stir-frying leeks to make them more tender.

Okra and Enoki Mushroom

Material

1 pack of enoki mushrooms, 2-3 large soy sauce, 2-3 large mirin, 10 okra

1. Make the seasoning first. Cut the enoki mushrooms into 4-5 equal parts.

2. Enoki mushroom soy sauce mirin. Put the pot on low heat and put the sterilized glass bottle in when the water is almost gone

3. Add water and a little salt to the pot and cook okra for 3-4 minutes.

4. Cut okra into pieces about 1 cm long

5. Serve 1/3 of the seasoned enoki mushrooms with okra

6. It tastes better after being placed in the refrigerator for more than 1 hour
