2. Add minced ginger, Maggi soy sauce, oyster sauce, salt, pepper, chicken powder and rice wine to the meat filling and mix well.

4. Chop the other portion of lean meat without tendons repeatedly with the blade of a knife, and then start to pound the meat into paste with the back of the knife.

5. Use the back of a knife to pound the meat paste repeatedly until it is very fine and can be spread with the blade without any particles.

6. Put the mashed meat on the chopping board, sprinkle a little dry powder and beat it repeatedly. After the meat paste is beaten hard, roll it into a ball and cover it with plastic wrap and sugar for half an hour.

7. Use a rolling pin to roll out the meat paste that has been coated with sugar. Sprinkle dry powder on the top and bottom while rolling to prevent it from sticking.

8. The meat paste is ready when it is very thin and translucent.

9. Cut the rolled skin into square pieces of suitable wonton skin size and set aside.

10. Mix the marinated meat filling and green onions and start wrapping.

11. It is very simple to make. Take a small piece of pork skin and spread an appropriate amount of meat filling in the middle. Then squeeze it with your hands. There is no need to fold or shape it. After wrapping, put it on a plate for later use.

12. First, add a little pepper to the chicken soup and bring it to a boil. Since the chicken soup I made has been seasoned in advance, I only need to add pepper. If the chicken soup is light, you can add salt to season it.

13. Pour hot water into another soup pot and bring it to a boil, then add the wrapped meat dumplings.

14. Cook the meat bird's nest until it floats on the water, then cook for another minute and remove from the water.

15. Put the cooked meat swallows into a bowl and pour hot chicken soup on it.

16. Sprinkle a little chopped green onion and coriander before serving.

17. Because one end of the wrapper is formed into a small meatball while the other end is fluffy and spread out, it looks like a swallow gliding with its wings spread, so it is called "meat swallow".
