How to make Shao-style noodle dumplings

1. Cut the pork belly into small pieces, chop the green onion and slice the garlic, put them in a bowl, add Shaoxing wine, light soy sauce, oyster sauce, dark soy sauce, white sugar, white pepper powder, mix well, and marinate for half an hour (I marinated it the night before and covered it with plastic wrap and put it in the refrigerator, it is very tasty, it is recommended to do this if you are not in a hurry)

2. Add an egg to the wheat flour and a little cold water, stir, knead and knead it into a ball, let it sit for 5-10 minutes, boil water in a pot, add a drop of oil, add half a teaspoon of salt, use scissors to cut into thin strips, cook until they float up, then take out the strips and remove from the pot.

3. Heat the pot and add 2 tablespoons of oil. Add the marinated pork belly and stir-fry until it is cooked (as shown in the first picture). Add the tomatoes and stir-fry for a few times. Add the Shaoxing dried vegetables and stir-fry evenly. Then add hot water and bring to a boil. Pour in the dumplings and cook for 2 minutes. Taste the soup and add some salt and chicken stock.
