1. Separate the egg whites and yolks, beat the egg yolks with sugar, add corn oil and stir until fully blended, add milk and stir until emulsified, dissolve the matcha powder in a little water and add to the egg yolk paste and mix well. Sift in low flour and stir until there is no dry powder. The batter is very thick at this point, just add the egg whites.

2. Add sugar to the egg whites in three batches and beat until they can be pulled into right angles.

3. Take one-third of the whipped egg whites and add them to the matcha paste, stir until blended, then pour into the remaining egg whites and stir evenly. Remember to stir.

4. Pour the batter into the mold to 80% full (I used two 4-inch loose-bottom cake molds, and there was some leftover cake batter to make a few cups for the children to take to school), upper heat 110 degrees, lower heat 160 degrees, 40 minutes (you can adjust the time according to the characteristics of your oven). Use a toothpick to poke the inside of the cake. If it is not moist, it means it is cooked through. After taking it out of the oven, turn it upside down and let it cool completely before removing it from the mold.

5. Slice the cake. Whip the cream (I didn’t add sugar, but you can add sugar if you like it sweet), put it into a piping bag, squeeze the cream in a spiral shape on each layer of cake, and place the chopped fresh figs on top.

6. I made three layers, but you can also make two double layers. You don’t need to squeeze the last layer of cream very evenly. Put fresh figs on it and garnish with mint leaves.

7. Finished product. The breakfast I gave my son - fig matcha naked cake is ready. The 4-inch cake is just the right size. Paired with eggs, vegetables and fruits, it is a breakfast that children love.
