How to make soy sauce tea eggs

1. Wash the eggs and put them in a pot, pour in cold water to cover the eggs, cook over high heat for 5 minutes, then take out the cooked eggs and put them in cold water. When the eggs are no longer hot, take them out and gently crack the eggshells. The more cracks there are, the easier it is to absorb the flavor, but be careful not to let the eggshells separate.

3. Add dry tea leaves, salt, cinnamon, star anise, bay leaves, and dark soy sauce in turn (please refer to the ingredients list for the amounts). Bring to a boil over high heat, then turn to low heat, cover the pot and simmer for half an hour.

4. Take out the eggs and the marinade for boiled eggs from the pot and cook for more than 2 hours to make them more flavorful. Look at the sauce that seeps through the cracks in the eggshell, how evenly it is applied. Take a bite and you can taste the rich aroma of tea and sauce. Add some porridge with it for breakfast and it will be a delicacy!
