How to cook boiled shrimp

1. Remove the shrimp thread, head and shell, wash and drain the water

2.1 Pour the shrimp paste into a large bowl and add egg white, cooking wine and salt

3.2 Put the shrimp into a blender and blend it into shrimp paste (If you don’t have a blender, chop the shrimp into small pieces with a knife first, then use the spine of the knife to slowly pound it into paste

4. Use chopsticks or a whisk to stir in one direction until the shrimp paste becomes firm. If you use two pairs of chopsticks, it will be more convenient to stir together. The shrimp paste with egg white will feel very thin when you first stir it. It doesn't matter. Just keep stirring in one direction and you will find that the shrimp paste becomes more and more sticky and thick. You will feel resistance when stirring, which means you are getting better.

5. Then add dry starch and stir in the previous direction for a while, and finally add cooking oil and stir. The finished shrimp paste is light pink. Mine is a little distorted in color due to the light.

6. Find a plate, pour the shrimp paste into it, spread it out and smooth it with the back of a spoon, and the raw shrimp paste is ready. Cover with plastic wrap and refrigerate for more than 2 hours, so that the shrimp paste will become harder and easier to handle.
