How to make three shrimp tofu

1.121 Wash the shrimps, peel them, remove the shrimp threads, and keep the shells and heads for later use. Mix the shrimps with a spoonful of cooking wine, a quarter spoonful of salt and a small amount of starch and marinate for 10 minutes.

2.212 Prepare all the ingredients, soak the fungus, and cut the green onion and ginger into shreds.

3. Pour a small amount of cooking oil into the pot, put the shrimp heads and shrimp shells into the pot, and slowly fry over low heat to produce shrimp oil.

4. Put the fried shrimp oil into a container and set aside. The shrimp heads can be eaten or discarded.

5.1 Rinse the blanched tofu with cold water, drain and set aside.

6.2 Put an appropriate amount of water in another pot and bring it to a boil. Put the chopped tofu into the pot and blanch it, and add 1 teaspoon of salt.

7. Cut the pork belly into small pieces and put them into the pot to boil out the lard.

8. Stir-fry the soaked black fungus that has been torn into small pieces for a while.

9. After about 1 minute, add the marinated shrimps and stir-fry quickly.

10. When the shrimps turn red, bend and dry, about 1 and a half minutes later, immediately put them into a bowl and set aside.

11. Wash the wok, pour the shrimp oil into the wok, add 1 bowl of water and 2 spoons of rice wine and bring to a boil.

12. Pour the tofu into the pot and cook together.

13. After the tofu is boiled, add the shrimps and cook together. After about 1 minute, add a small amount of salt and half a spoonful of oyster sauce to season.

14. After all ingredients are seasoned, sprinkle with dried shrimps and mix well, then thicken with water starch. When the sauce becomes transparent and thick, turn off the heat and serve.
