1. Slice the lamb when it is half thawed (try to slice it as thinly as possible, the one in the picture is not too thin)

2. Cut the lamb into thin slices, fold them a few layers and pierce them with toothpicks. Use one toothpick to pierce one piece of meat for a long piece of meat, and one toothpick to pierce two or more pieces of meat for a small piece of meat.

3. Pour a small amount of oil into the pot (especially when the mutton is fatter, very little oil is used for frying or roasting, otherwise there will be a lot of oil left after frying), or take some of the fat part and refine the mutton fat over low heat like I did.

4. Remove the meat residue after refining the mutton fat

5. Turn on high heat and add the skewered lamb

6. Stir-fry quickly to change the color of the lamb

7. Fry until the mutton releases moisture naturally

8. Add chili powder (I added fine chili powder first, then coarse chili powder, you can add only one) and stir fry evenly

9. Add a lot of cumin powder

10. Add appropriate amount of salt

11. Continue to stir fry quickly

12. When the soup from the mutton is collected, coat the mutton evenly with chili and cumin and turn off the heat.
