10. When the soup in the pot reaches the same height as the meat, add the tripe and continue to simmer over low heat.

11. When one third of the soup is left, scoop out the spices and discard them, then taste the soup. Shanghai people like sweet food, so I will add some sugar and stir-fry it, then cook over high heat to reduce the water.

12. Keep stir-frying until only oil is left from the soup.
