How to make braised spare ribs, dried beans and vermicelli

1. Soak the dried beans in warm water for 20 minutes, and wash them after they are softened; soak the vermicelli in cold water for 10 minutes (because it is used for stewing, it does not need to be soaked for too long, and you can also use warm water without water, or just wash it. You can choose the water and time according to the width of the selected vermicelli); wash the ribs, and be careful to remove the broken bone residue

2.1 Wrap the meat tightly, put half a pot of water in the casserole (if you don’t have a casserole, you can use a frying pan or soup pot), then put the meat package, scallion segments, ginger slices, and hawthorn in, and the water should cover the ribs. Bring to a boil over high heat, skim off the foam, cover the pot, and simmer over low heat for 40 minutes.

3.2 Put clean water and spareribs in a wok, cook for five minutes after the water boils out, remove the spareribs after the blood and foam float, and discard the soup. The floating foam produced during the first cooking process contains substances that are not beneficial to the human body. It is best not to continue cooking with such soup. Take a clean gauze and put in the stewing ingredients, such as cinnamon, nutmeg, pepper, aniseed, bay leaves, tangerine peel, etc.

4. Open the lid, add dried beans, appropriate amount of refined salt, rock sugar, soy sauce, chicken essence and continue to simmer for 20 minutes, then add vermicelli and simmer for another 10 minutes, then turn off the heat.
