4.2 When marinating the meat, put the tofu in cold water, add 1 teaspoon of salt, boil the cold water until the water just starts to bubble, then take out the tofu and drain the water. This will remove the beany smell and keep the tofu from breaking.

5. Add 2 tablespoons of starch to the meat and stir evenly, then add 2 tablespoons of water. Do not add too much water.

6. The marinated meat should be bright in color and no starch should be visible.

7. Cut the tofu into thin slices, change it into the size of pork skin, be careful not to break it

8. Place the meat skin side down, and alternate between a piece of meat and a piece of tofu in a deep bowl. After arranging, place the scallion segments, ginger slices, cinnamon, star anise, and peppercorns on the surface to make it easier to pick out later.

9. When the steamer is hot, place a plate on the bowl and steam over high heat for 1 hour and 30 minutes.

10. After steaming, filter out the broth and set aside. Pick out the green onions, ginger, peppercorns, aniseed and cinnamon. Place it on a plate and place the side dishes around it. I used pea tips.

11. Heat the filtered broth, add water and starch to thicken, and when the broth becomes thick, pour it on the meat.
