How to make crispy durian ice cream

What do you do when you are unhappy? Maybe you will choose to cry or laugh, or go out and have fun, or smoke or drink, etc., but I believe there are definitely people who are willing to choose "eating". When you are unhappy, you might as well make something delicious for yourself, maybe your mood will improve immediately. Well, let me first introduce how to make crispy durian ice cream.

1. How to make durian ice cream: Put the durian flesh into a plastic bag, remove the seeds and press it into a paste.

2. Put the durian paste into a container and add condensed milk.

3. Blend in a food processor.

4. Stir into a paste.

5. Pour whipped cream into the container.

6. Use an electric mixer to beat the cream until it is 70% to 80% (to a thick and non-flowing degree), and refrigerate for 20 minutes to set.

7. Take 1/3 of the whipped cream and add it into the durian puree, then stir well.

8. Pour the mixed durian cream liquid into the remaining 2/3 of the whipped cream, stir evenly, and refrigerate for 30 minutes.

9. Wash and dry the inner barrel of the ice cream machine 15-24 hours in advance, cover it with plastic wrap, and freeze it in the refrigerator.

10. Wash and dry the outer barrel and stirring stick of the ice cream machine 3-5 hours in advance and refrigerate them.

11. After installing the inner and outer barrels of the frozen and refrigerated ice cream machine, rotate the stirring rod first.

12. Put the cooled durian cream paste into a piping bag and squeeze it into the ice cream machine through the feed port.

13. Stir in a swirling motion for about 30 minutes until the ice cream is thick and dense.

14. Take out the inner bucket of the ice cream machine, cover it with tin foil, put it in the freezer of a -18 degree refrigerator, and freeze it into shape.

15. Crispy crust method: Put egg whites, fine sugar and salt in a container and mix well with a hand mixer.

16. Sift in the low-gluten flour and mix with a hand mixer until it is 90% smooth.

17. Add the melted butter and mix well with a hand mixer.

18. Mix well to form a smooth batter.

19. First bake the mold over medium heat for one minute on each side, then change to medium-low heat, scoop about 35 grams of batter into the middle of the mold, cover with the handle, bake over medium-low heat for one minute, then turn over and bake for another minute.

20. Bake until both sides are golden brown, pick up with chopsticks and eat after cooling.
