People with tonsillitis, nasal abscesses and otitis media should not eat leeks. There are also some taboos: leeks and beef are incompatible: eating them together can easily cause poisoning. How to make beef rolls with chives;

Ingredients: 4 liang of leeks, 4 liang of shredded beef, 6 portions of bean curd (not fried)

seasoning:

1/4 tablespoon salt, 1 tablespoon soy sauce, 1/2 tablespoon sugar, 2 teaspoons sesame oil, 1 teaspoon pepper, 1/2 tablespoon cornstarch. 1 1/2 tsp salt, 2 tsp pepper.

1. Wash and drain the leeks. Add seasoning A to hot water and blanch the whole leek for 15 seconds. Remove from the heat immediately and put it in cold water. Remove from the heat when it is cool, drain and set aside.

2. Add seasoning B to shredded beef, mix well, and fry in hot oil until 80% cooked. Drain the oil and set aside.

3. Mix seasoning C evenly, add bean curd skin, spread evenly, and cook in order. Marinate for about 5 to 8 minutes and set aside.

4. Take a portion of bean curd, open it and flatten it with the wider side facing you, put in 1 tablespoon of shredded beef and 3 leeks, fold the leeks back and forth according to the size of the bean curd, then roll it from the beginning to the end and secure it to make a leek beef roll. All are ready and set aside.

5. Heat a frying pan, add a little oil, put in the leek beef rolls, fry until golden brown and serve. Cut the slanted surface and place in the pot.

Chive Beef Dumplings:

Ingredients: 500 grams of beef, 1000 grams of leeks, 50 grams of onions, 1 egg, 50 grams of ginger juice, 5 grams of tenderizer, 10 grams of salt, 5 grams of pepper, 15 grams of cooking wine, 25 grams of soy sauce, 15 grams of MSG, 25 grams of sesame oil, 30 grams of refined oil, and 50 grams of dry starch.

Preparation method:

1. Remove the fascia from the beef, wash it, mince it into fine pieces, mix it with tenderizer, cooking wine, and refined oil, let it stand for about 40 minutes, then add ginger juice and 250 grams of water and mix well;

2. Put the chives on the chopping board and chop them into small pieces, then wrap them with gauze and squeeze out the water. Chop the onion into small pieces;

3. Add leeks and chopped onions to the minced beef, mix well. Then add salt, pepper, soy sauce, MSG, sesame oil, dry starch and egg liquid and mix well. The beef dumpling filling is ready.

Kind tips:

1. There should be no fascia in the beef, and the beef should be minced finely to absorb more water and make it tender;

2. Meat tenderizer can also be replaced with baking soda, but the amount should not be too much;

3. If there is no onion in the ingredients, you can use scallions instead.
