Tomato and egg stewed noodles

3. Use a hammer to beat it into large thin slices.

7. Boil a pot of water, bring to a boil and blanch the noodles, remove them from the water and put them in a basket, rinse off the mucus with cold water and set aside.

8. While the water is boiling, you can prepare the tomatoes, eggs and chopped green onions: wash the tomatoes and cut them into small cubes, beat the eggs and chop the green onions.

9. Heat 1 tablespoon of oil in a wok.

10. Fry until the surface of the eggs is slightly charred and then remove from the pan and set aside.

11. Add another 1 tablespoon of cooking oil and stir-fry the tomatoes.

12. When the tomatoes are fried and the water is released, add the eggs.

13. Add appropriate amount of salt and chicken essence and stir-fry for a few times before turning off the heat. If you continue to stir-fry, the soup will dry up. Because we are going to make stewed noodles, there must be a lot of tomato and egg soup.

14. Boil another pot of water and put the blanched noodles in.

15. It’s basically cooked after boiling.

16. Remove from the pot, pour tomato and egg sauce on top, then add a little salt and chicken essence. Although salt and chicken essence have been added when making scrambled eggs with tomatoes, the taste will be bland if you don’t add some more salt and chicken essence.
