1. A big piece of ripe, sweet and fragrant durian.

2. Take 240 grams of durian flesh and add 50 grams of milk, and use a food processor to beat it into puree.

3. Whipped durian puree.

4. Split the vanilla pod and scrape out the vanilla seeds with a knife.

5. Place the vanilla seeds and vanilla pod in the milk.

6. Heat the milk until boiling, turn off the heat and remove the vanilla pod.

7. Add 100 grams of fine sugar to the egg yolk and beat with a whisk.

8. Beat until the egg yolk becomes viscous and light yellow in color.

9. Pour the heated milk little by little, stirring while pouring. Be sure to pour it little by little to avoid scalding the egg yolk into egg droplets.

10. Heat the milk and egg yolk mixture on low heat, stirring while heating, until the egg yolk mixture becomes viscous. Use your finger to scratch the egg mixture on the back of the spoon. It's fine as long as the scratch does not close.

11. Let the heated milk and egg yolk mixture cool slightly, add the previously beaten durian puree and mix well.

12. Add 50 grams of fine sugar to 300 grams of whipping cream and beat until 80% fluffy.

13. Add whipped cream to the milk and egg yolk mixture.

14. Mix well.

15. Pour into the popsicle mold, don’t pour too slowly, just fill it 90% full. Just refrigerate and freeze.
