1. Soak the vermicelli in hot water first, take out and drain the water, then blanch it in cold water.

2. Cut the chicken into pieces, put it in cold water to remove the blood, bring the water to a boil, take it out and rinse it with cold water.

4. Pour oil into the pan, add onion, red pepper and chicken pieces and stir-fry after the oil boils.

6. Cook over high heat until the sauce thickens, add vermicelli and an appropriate amount of salt, stir-fry for a few times and serve.

The vermicelli should be added at the last minute and served immediately after boiling, as vermicelli can absorb the juice most easily.

After the vermicelli is soaked in hot water, it should be blanched in cold water. This will prevent it from becoming hard, sterilize it, and make it taste better.

2.1 Clean the pan, pour in vegetable oil, and stir-fry peppers and chicken. Pour hot water into the pot.
