How to make purple sweet potato siomai

1. Add milk and purple sweet potato and blend into puree in a food processor.

2. Add flour and make a harder dough.

3. Use a dough pressing machine to repeatedly press the dough into fine and uniform dough sheets.

4. Spread starch on top, adjust to level 4 and press again. Apply powder again, adjust to level 9, and press into thin slices.

5. Apply powder, fold it, and use an omelette maker (this is the most suitable size I found) to shape it.

6. Use the same method to prepare the skin and wrap it in a plastic bag to prevent it from drying out.

7. Soak glutinous rice for 4 hours in advance.

8.Put the glutinous rice in a steamer and steam it until cooked. (I didn’t check the time, it felt like about 20 minutes, I tasted it)

9. Dice carrots, celery, onions and sausage. Soak the mushrooms in advance, dice them, and keep the water used to soak them.

10. Heat the pan, pour in oil, add onions and stir-fry until fragrant.

11. Add the diced sausage and stir-fry until the fat releases oil.

12. Add diced carrots, diced celery and diced mushrooms at one time and stir-fry.

13. Add the steamed glutinous rice.

14. Pour in the water used to soak the mushrooms and stir-fry.

15. Add salt.

16. Add white pepper powder.

17. Add white sugar.

18. Add Huadiao wine, stir well, and add chicken essence to season.

19. The siomai filling is ready.

20. Take a piece of skin and use a rolling pin to press the edges (don’t press in the middle) to make wrinkles.

21. Place the filling in the middle.

22. Use your thumb and thumb to close the opening and shape it. Try to make it as compact as possible. If it is too open when it is raw, it will not look good when steamed!

23. Boil water in a steamer, place the siomai in the pot, and steam for 8-10 minutes before serving.
