Mix 3 tablespoons of cooking wine (about 45ml), 1/4 teaspoon of salt (about 3g), 1 tablespoon of sugar (about 8g), 1/4 teaspoon of white pepper (about 5g), 1/2 teaspoon of chicken essence (about 5g), and 1/2 teaspoon of sesame oil (about 8g) evenly.

4. Pour the marinade on the fish and spread it evenly with your hands. If you have time, marinate for more than an hour; if you don’t have time, 15 minutes will do. Remember to taste the saltiness of the marinade first. All kinds of sauces are relatively salty, so don’t add too much salt.

5. Cut the onion into onion shreds and set aside. Use a large amount of onion.

6. Brush oil on the four sides of the casserole and pour a pot-full of salad oil into the bottom, a little more. When it starts to smoke slightly, pour in the shredded onions and stir-fry until the aroma comes out, then turn off the heat. Do not stir-fry until it becomes transparent.

7. Arrange the fish pieces evenly in the casserole and pour the remaining marinade on the fish.

8. Cover the casserole with a piece of tin foil and seal it tightly on all sides. Cook over high heat for 2 minutes, then simmer over low heat for 15 minutes.
