How to make country stewed lamb shanks

Stewed lamb legs have become a common delicacy. This delicious dish can now be seen in major restaurants. Especially the taste from the countryside, which makes people linger in the memory. Lamb legs themselves have high nutritional value and contain protein and vitamins. Eating them often can strengthen the body and improve body resistance. It is a good warming tonic, which is why many people like it. So how to make roasted lamb legs in the countryside?

Main Ingredients

2 medium potatoes

2 carrots

3 medium tomatoes

2 onions

White kidney beans 200g

20g fresh rosemary

20g each of fresh mint leaves and thyme

1 teaspoon each of yellow curry powder and salt (5g)

1 tablespoon red wine (15 ml)

2 tablespoons oil (30 ml)

Preparation method

1Soak the white beans in water for 4 hours in advance. After they are soaked, remove them and wash them for later use.

2 Rinse the lamb legs with running water and cut into large pieces.

3. Peel and clean the potatoes, then cut into medium-sized dices.

4 Wash the carrots and cut them into dice similar to potatoes.

5Wash the tomatoes and cut them into 1cm pieces. Peel the onions and wash them. Also cut into 1cm pieces.

6 Pour 1 tablespoon of oil (15 ml) into a pressure cooker, heat it over high heat until it is 70% hot, pour in the chopped large pieces of mutton, stir-fry repeatedly until the water in the mutton is extracted and evaporated (this process takes about 10-15 minutes), stir-fry until the mutton is dry and fragrant, and serve on a plate.

7 Pour the remaining oil (1 tablespoon, 15 ml) into the pressure cooker, heat it over high heat until it is 70% hot, add the chopped onion, stir-fry until fragrant, then add the chopped tomato, continue to stir-fry for 1 minute, then add the soaked white beans, potato cubes, carrot cubes, and lamb cubes, stir-fry evenly.

8 Add yellow curry powder, salt, thyme, rosemary, mint leaves and red wine, and add water (just enough to reach the same level as the ingredients in the pot). Cover the pressure cooker with a lid, simmer over high heat until the pressure starts to boil, then reduce to low heat and continue simmering for 50 minutes.

Tips

About fresh spices: Fresh rosemary, thyme, mint leaves and other herbs can be purchased at the refrigerated counters of large supermarkets. If you can't buy fresh ones, you can use canned dried herbs instead, which can be purchased on the condiment shelves.

Substitution of red wine: You can omit the red wine in the recipe and use Chinese rice wine instead.

Rice is also fine: because it contains a large amount of white beans, women with small appetites do not need to eat staple foods at all. For people with large appetites, they can pair it with some rice and it will be a perfect meal.
