How to make pig's trotter

1. Soak the pig's trotters in clean water for more than 2 hours, remove the remaining hair on the pig's trotters with tweezers, remove the hoofs, scrape the surface of each pig's trotter with a knife to remove dirt and grease on the skin, and rinse with water (this way the braised pig's trotters will not have a fishy smell)

2.1Put water in a pot and boil, add the pork knuckle and cook for 3 minutes

3.2 Stand the processed pig's trotter upright and cut it in half between the two toes with a knife, then cut each clove into 3 small pieces. Do the same with the other pig's trotter, and cut the two pig's trotters into 12 small pieces in total.

4.1 Put the processed pork knuckle into the inner pot of the pressure cooker, add hot water, cooking wine, sugar color, light soy sauce and dark soy sauce, boil the pot on the stove, and then skim off the small amount of foam on the surface.

For an ordinary pressure cooker, it can be cooked for 15 minutes after the steam comes on; for an ordinary pot, it needs to be cooked on low heat for about 1 hour, and it is done when you can insert chopsticks into the meat.

9.2 When stewing the pig's trotters, peel the potatoes and cut them into pieces. Prepare the chili bean sauce.

10. Add a little oil to the chili bean sauce and stir-fry until it turns red and fragrant. Pour in a bowl of pork knuckle soup, boil for 2 minutes after the pot boils, and then remove the residue.

11. Pour the prepared soup into the pig's trotter and potato bowl, the amount should almost cover the ingredients, then put it into the steamer and steam it on medium heat for 30 minutes after boiling.

12. Take out the pork knuckle and the basin, cover it with a small plate and pour out the soup.

13. Then replace the plate with a large one and cover it with the pork knuckle and potatoes in the pot. Turn the pork knuckle and potatoes over so that the skin of the pork knuckle is on the top.

14. Pour the poured soup into a clean pot, add a little water starch to make a thin sauce, then add a little cooking oil and stir well (add oil to make the sauce bright), then pour it on the pig's hand.
