After the pressure cooker is cooked, let it release pressure automatically, open it, and take out the pig's trotter when it is not hot.

8. Take out all the seasonings from the soup.

9. You can skim off the oil from the soup pot after it cools down, or you can leave it alone and wait until the pig's trotter jelly solidifies. When eating, you can scrape off the grease floating on the jelly with a spoon.

10. Remove all the bones from the pig's trotter, and then cut the skin and meat into small pieces.

12. Pour the broth from cooking the pig’s trotter into the box until it covers the meat.

13. Refrigerate until solidified, then turn the pig's trotter upside down and cut it into thin slices or small pieces. Dip it in the sauce when eating.

14. Make the dipping sauce: add a little salt to the garlic and mash it into garlic paste. Put it in a small bowl and add a spoonful of warm water to make a sauce. Then add soy sauce, vinegar, chili oil and sesame oil and mix well.
