1. Wash the ribs, put cold water into the pressure cooker, add 4 times the amount of water, add onions, garlic and two tablespoons of cooking wine (1 tablespoon = 15ML)

2. Cover the lid (do not cover it completely) and bring to a boil over high heat

3. Skim off the residue

4. Put the lid back on, add the valve, check the valve for smoothness, then turn to medium heat and start to press for 10 minutes

5. Turn off the heat after pressing for 10 minutes and wait for the gas to be released

6. Open the pot and add yam and carrot cubes, add 1 teaspoon of salt (1.5 grams), then cover it, wait for the steam to come out and press for another 3 minutes, then turn off the heat. After the gas is naturally deflated, you can serve it out and eat it. Very crispy

7. Sprinkle some chopped green onions before eating to enhance the flavor.
