Yunnan roasted rice cake is a snack from Dali, Yunnan. Since rice cake is made from very good quality rice, it can be divided not only into cakes, but also into strips and slices. It is not easy to feel disgusted by eating Yunnan roasted rice cakes for a long time. So what is the production method of Yunnan roasted rice cakes?

First, what is the method of making Yunnan roasted rice cake? "Roasted rice cake" is a local folk snack in Yunnan. It is made by pressing cooked rice into blocks, usually in the shape of round pancakes. It is baked on charcoal fire, and then coated with sauce and vegetable fillings. The method is the same as that of glutinous rice cake. But the raw material of glutinous rice cake is glutinous rice, and the raw material of rice cake is rice. The name of rice cake used to be "rice cake", but the word "cooking" is troublesome, and most of the rice cakes are made into blocks. Over time, it was called "rice cake". In the past, rice cakes were pounded by hand. Now it is changed to machine pounding, and the machine beats fifty or sixty kilograms of rice at a time, and then kneaded by the machine.

In Kunming, small pot stewed bait blocks are mostly made from bait blocks produced in Guandu. They are cut into strips and topped with pea tips, then stewed with special copper sauce and various seasonings.

How to make Yunnan roasted bait cakes? Bake small cake-shaped bait cakes over charcoal fire until both sides of the bait cakes turn slightly yellow and bubbles appear. Pick them up and spread the sauce on the bait cakes. There are two kinds of sauces, sesame sauce and chili sauce. Apply both. Then fold it in half and you can eat it. Some people put something in the bait block, such as a fried dough stick, a few slices of braised beef, or a lettuce leaf. Roasted bait kuai is the Mandarin term, and in Yunnan people's terms, it is called burnt bait kuai. But telling outsiders that it is burning can easily cause misunderstanding. People in Jiangsu and Zhejiang areas call stir-fried dishes "shaocai". If you say "shaoerkuai" and someone mistakenly thinks you "chaoerkuai", you will be in trouble. So it was changed to roasted to distinguish it. [1] The side dishes for fried rice cakes include pickled mustard greens, ham slices, pea tips, and leeks. Stir-fried bait cubes: Heat vegetable oil and chopped green onions in a pan, stir-fry, add bait cubes and side dishes, and season with salty soy sauce and sweet soy sauce. Cut the bait into thin small pieces, and then use a knife to cut it into diamond-shaped pieces. Fried bait cubes are usually oily. According to Kunming custom, people eat fried rice cakes on the second day of the Lunar New Year. You have to get up early on this day, cut the bait and slice the ham.
