The fundamental reason why cloves can bring out the fragrance of the bone marrow is because cloves themselves are very powerful, but cloves have a weakness, that is, if the amount of cloves used is too large, it will cover up the flavors of other spices. As the saying goes, when cloves come out, only the fragrance is there.

The second weakness of cloves is that a black hot substance will appear in the brine, which can make the soup black. Although it is a weakness, if used properly, for example, many raw materials need to be supplemented with color, especially in the case of black, it can be used as a medicinal material, which is the dried whole herb with rhizomes of the plant ground mulberry leaf. The rhizome is cylindrical, about 10 cm long; the surface is grayish yellow, the cross section is yellowish white, and woody. But if you know this basis and want a stronger bone-penetrating fragrance when using it, but do not pursue the effects of other spices, then you can increase the amount of cloves. For example, if the ingredients you are marinating have high requirements for black, such as Zhou Hei Ya, then the amount of cloves can also be increased. If it is not these two situations, everyone must grasp the dosage standard when using cloves.

Now that we know the medicinal properties and dosage standards of cloves, what spices are best combined with cloves? For example, if cloves are the main ingredient, then galangal is the one that can stimulate its flavor. At this time, galangal plays the role of a minister. Licorice can be used as an adjuvant because it can protect and blend the fragrance. The strong taste of cloves can cover the flavors of other spices, so licorice can weaken its strong momentum and make the fragrance softer. The main, minister, assistant and guiding ingredients can be tangerine peel, which can complement each other and increase the fragrance.
