How to make Earl Grey milk tea bread

2.2 Prepare condensed milk tea first: heat the milk and cook it. Add Earl Grey tea leaves, bring to boil and remove from heat. Soak for about 15 minutes to allow the tea leaves to release their fragrance. Drain the tea leaves and weigh out the required amount (80 g). Grind the 13 grams of Earl Grey tea leaves needed for the dough in a blender and set aside.

Main dough: Mix all the dough ingredients [199g high-gluten flour, 27g skim milk powder, 7g salt, 80g fine sugar, 80g egg, 80g condensed milk tea, 4g instant dry yeast, 66g unsalted butter, 13g Earl Grey tea leaves] (except unsalted butter), stir well, gradually add in the starter, beat until gluten is formed, then add in unsalted butter, beat until complete (a thin film that can be pulled apart, with smooth edges of the holes), put in a bowl, cover with plastic wrap, and let the first fermentation take about 30 minutes. When the dough has doubled in size, poke a hole in the middle of the dough with your index finger. If the hole does not shrink after you pull it out, fermentation is basically complete.

4. After basic fermentation, divide the dough into 5 portions (three portions of 180 grams are placed in a 1-pound toast mold, and two portions of 270 grams are placed in a water cube each), exhaust the air, roll into a ball, cover with plastic wrap, and relax for about 15 minutes in the middle. (After dividing, the extra dough was used to make two small loaves)

5. Use a rolling pin to roll the relaxed dough into an oval shape and remove the air. Turn over and fold up the left 1/3 of the dough, then fold up the right 1/3. Then, use a rolling pin to make it longer.

6. Roll the dough with the closed end facing down. Put them into the toast mold brushed with unsalted butter for final fermentation. The final fermentation temperature is 38℃, about 40-45 minutes, and fermentation is 80% full. Brush the surface with egg wash (extra amount), put it in the preheated oven, and bake at 180℃ (lower middle layer) for about 30-35 minutes. After the bread comes out of the oven, remove it from the mold immediately. Let cool completely on a rack, then slice and bag.
