1. After mixing all the ingredients until the surface is smooth, add lard and mix until done. Add raisins and mix slowly until evenly combined.

2. Ferment at room temperature 25℃ for 50 minutes

3. Divide into 250g pieces, roll into balls and relax for 30 minutes

4. Deflate the dough and roll it into a cylindrical shape

5. Sprinkle dark rye flour in a long rattan bowl and place the dough in the bowl.

6. Ferment at room temperature of 28°C for about 50 minutes

7. After fermentation, turn the bread upside down on the baking tray

8. Use chopsticks to make a hole in the middle

9. Bake at 210℃ with steam for about 25 minutes
