How to make cocoa mango mousse

1. Use the mousse mold to cut the cocoa cake into the shape you want. This menu uses a square 6-inch mousse mold.

2. The ingredients for making mango mousse paste are as shown in the picture. Cut the mango into three parts, make one part into mango puree, one part for mango cubes for decoration, and one part for mango cubes for filling.

3. Add gelatin powder into milk and mix well.

4. Stir the milk and gelatin powder in hot water until there are no particles. Let it cool and set aside

5. While the gelatin liquid is cooling, add sugar and whip the cream until it is 60% pure, similar to yogurt.

6. After the gelatin liquid has cooled, pour it into the mango puree and stir evenly.

7. Mix the pastes in step 5 and step 6 evenly. The mango mousse paste is ready.

8. Wrap the mold with tin foil and cover it with cocoa cake slices.

9. Pour the mango mousse paste and cover with diced mango

10. Cover with another piece of cocoa cake and press it down lightly.

11. Pour the remaining mango mousse paste, shake it gently a few times to make the paste even, smooth the surface, put a plate on it, shake the plate a few times to shake out the bubbles, and put it in the refrigerator for more than four hours to set.

12. After the mousse is set, make it into a mirror surface and prepare the materials as shown in the picture.

13. Pour orange juice into gelatin powder and stir in hot water until there are no particles. Let it cool and set aside

14. Pour the cooled orange juice gelatin liquid into the mousse cake and refrigerate for one hour to set.

15. After one hour, peel off the tin foil, change to a beautiful plate, use a hair dryer to blow around the mold to remove it, and place mango cubes on it for decoration. You are done.
