11. Stir the egg yolk paste with an egg whisk to prevent it from sinking to the bottom unevenly. Add about 1/3 of the egg white to the egg yolk paste and mix gently.

12. Pour the egg yolk paste back into the egg white paste

13. Use a spatula to cut and mix evenly. Pay attention to the bottom to prevent sedimentation, and be careful not to stir excessively to eliminate bubbles

14. The finished cake batter is even, delicate and light

15. Pour the cake batter into the mold and shake it gently to remove the bubbles.

16. Place the mold into a baking tray and pour in room temperature water to a height of about 1cm. Preheat the oven to 180 degrees in advance, turn it to 150 degrees and bake for about 70-75 minutes. (Because the oven door cools down, the temperature is increased to preheat to maintain the temperature) Finally, if you find that the color of the skin is not good enough, you can put it on the highest layer, or turn up the upper fire and bake for 1-2 minutes to enhance the color of the bottom
