You can also use a regular grater with the finest opening, but that will only result in crumbs. The aroma will be released better, but the taste is not as good as shredded lemon peel.

2.21 Use 25 ml of boiling water to brew 5 grams of green tea leaves and set aside. Any green tea will do, but other teas can be used as well. Don't choose too large a variety of tea. For example, if you choose a large piece of tea like Taiping Houkui and bake it into the cake, the taste will probably not be very good. Any common green tea will do.

3. Crack 2 eggs into a mixing bowl. Place the mixing bowl in a pot of hot water. Beat with an electric whisk while heating it. Add a total of 60 grams of fine sugar in 3 times until it becomes a smooth and thick cream.

4. Sift in 70 grams of low-gluten flour, and use a rubber spatula to scoop up from the bottom and stir evenly. Never stir in circles.

5. Pour in 15 ml of vegetable oil, tea water (including tea leaves), and lemon peel, and stir quickly to mix evenly.

6. Pour into the mold. I used several small cake molds of different shapes. There are many molds suitable for sponge cakes. You can use any mold, even a paper cup. The amount of batter is not large, so a 6-inch pan can barely be used, but an 8-inch pan will not work because the bottom area is too large and the pan will be too thin when baked. Bake at 180 degrees on the middle layer for 15-20 minutes. Adjust the depth according to the size of the mold.

7. If you have some spare time, you can whip some whipped cream. I didn't weigh it, I just added some sugar to the whipped cream and beat it until it was about 70% to 80% fluffy. It tasted delicious when eaten with the cake.
