Almond Jam Cookies

1. Soften the butter at room temperature, add sugar and vanilla extract, and beat. Add egg yolk and mix well.

2. Mix flour, almond powder and baking powder evenly, sift into butter and mix into dough (Note: I used low flour instead because I ran out of almond powder when making this)

3. Take 1 tablespoon of dough and knead it into a ball. Place it on a baking sheet, with each ball about 5cm apart.

4. Use chopsticks or other tools to press a small hole in the middle of the ball, 1.5cm wide and 1cm deep, mix the jam and lemon peel and scoop it into the hole with a small spoon.

5. Preheat the oven to 180 degrees and bake for about 25 minutes. After baking, let cool and store in airtight bottles for 3 weeks
