1. Wash and soak the glutinous rice. (There is no strict rule for this time, it mainly depends on your own time. I wash the rice and soak it after lunch, and then make the rice dumplings after taking a nap.) You can also soak them in water for a longer time after wrapping them.

2. Drain the soaked glutinous rice, add edible alkali, salt and corn oil and mix well. (The alkaline content of alkaline rice dumplings is relatively higher, while the alkaline content of other rice dumplings can be lighter).

3. After frying the bacon, let it cool and cut into small pieces for later use.

4. Take two pieces of washed rice dumplings leaves.

5. Align the leaf tips and roll them inward clockwise to form a funnel shape. (If the rice dumpling leaf is relatively large and the funnel is relatively large, you can also move the tip of the leaf to the left like I did, so that the funnel becomes smaller and the rice dumpling made will be smaller).

6. Put half of the glutinous rice into the funnel and then put in the bacon.

7. Add glutinous rice into a flat funnel and press the rice leaves on both sides inwards as shown in the picture.

8. Fold down the upper leaves and press down the leaves on both sides along the shape of a funnel.

9. Continue to fold the excess rice dumplings leaves along the shape of the funnel in any direction you like.

10. Tie it tightly with hemp, but don’t tie it too tightly. The glutinous rice will expand during cooking, and if it is tied too tightly, the rice dumplings will easily burst during cooking.

11.Cut off the excess rice dumplings leaves. (Extra leaves can easily pierce other dumplings, especially those with hard stems).

12. Soak the prepared rice dumplings in clean water and cook them together with other rice dumplings. After the pressure cooker is steaming, continue cooking for 25 minutes.
